Party Sandwiches

These colorful party sandwiches are tasty bite size appetizers that will look good on your serving table, and everyone would be complimenting you on their looks and flavor! If you have all the ingredients ready, you can have some of your guests help you put them together.

Ingredients:

Eggplant
Olive oil
Cherry tomatoes
Pesto sauce
Bread

Cut the eggplant into thin (about 1/2 cm) slices and sprinkle some oil on both sides. Don't soak in oil because eggplant tends to absorb it. Grill the elggplant for a few mintues on each side until it soft and had grill marks.

Place a piece of eggplant on each slice of bread. Then put 1 teaspoon of pesto sauce, and half of a cherry tomato on top of it.
