Vanilice- Serbian Holiday Cookies (Serbian= Ванилице)



Vanilice are Serbian holiday cookies. They are basically bite size jam sandwiches covered in powder sugar that look pretty on your coffee table. They can be made in big batches as they can stay good for a really long time.


Ingredients:

1/2 lbs margarine (unsalted)

1/2 lbs sugar

1 egg

2 tbs baking soda

peal from
1 lemon

1 lb flour

1/2 lbs ground walnuts
powder sugar
1/2 tsp vanilla extract
jam


Mix all the ingredients except jam together, and stretch the dough with a rolling pin to the thickness of about 1 finger (you might have to split the dough into two parts). The dough is very sticky, so be sure you use plenty of flour on your counter tops. Use a round cookie cutter or a shot glass to cut round shapes.


Transfer them into a greased pan. Bake for 20 minutes at 350F.


While the cookies are still warm, take them out of the pan, apply jam and make sandwiches.


When they cool down, roll them in powder sugar. Wait at least one day before serving them. As the time goes on, they just get better and softer. They go well with coffee or tea.

    I'm not a fan of walnuts; what can I substitute?

  2. Yes, it's a sweeeet desert! You can use any other kind of nuts- pecans, macadamia, hazelnuts or almonds, or you can just skip nuts altogether if you are allergic.
