Cream of Mushrooms




Ingredients:

2 packages of mushrooms
1 onion
1/2 cup sour cream
4 tbsp flour
3 tbsp paprika
salt and pepper to taste
oil




Saute onions in oil over medium heat.


Wash the mushrooms and slice them.



When the onions become soft, add mushrooms to the pan and 1/2 cup of water.


They will cook down and release lots of water. Allow them to cook for about 10 minutes, until they are soft. Transfer some of that water into a cup and add flour and paprika. Mix well to form a homogeneous mixture.


Then, add this mix back to the pot and stir.


Allow to cook for another couple of minutes to thicken. Add salt and pepper.


Add sour cream. You can add more sour cream if you like it more creamy.


Transfer the mushrooms with the sauce into an oven safe dish. Bake at 400F for 15 minutes.


This dish goes well with chicken, or can be served as an appetizer.

Pogačice- Butter Puffs (Serbian=Погачице)




Ingredients:

2 sticks butter (softened)
250 g feta cheese
250g flour
2 tbsp baking powder
salt to taste

glaze:
1 egg yolk
sesame seeds


Combine butter, cheese, flour, baking powder and salt in a bowl and using a mixer, make he dough.

Preheat the oven to 400F.

Sprinkle some flour on a clean and dry kitchen counter. Stretch the dough with a rolling pin to about 1cm thickness. Then use cookie cutters to cut circular shapes out.


Roll out the remaining part of the dough and repeat this process until you run out.

Arrange the pastries in a pre greased pan.


Spread the egg yolk over the pastries and sprinkle sesame seeds.


Bake at 400F for about 15 minutes.

Grilled Chicken Salad



Ingredients:

chicken breasts
mixed salad greens
seasoning
Worcestershire sauce
oil

Dressing:
balsamic vinegar
olive oil
thyme
salt
pepper
a drop of mustard


Preferably, a couple of hours before grilling, apply seasoning generously on both sides of the chicken breasts. I use chunky seasoning, add some salt and pepper, and paprika and garlic powder if the seasoning doesn't contain it already. Press with your fingers to make sure the spices get absorbed. Then sprinkle some Worcestershire sauce and oil over it. Cover and leave in the refrigerator until you are ready to grill it.


Grill the chicken, and while it is grilling, wash and cut salad greens .


Make salad dressing. I make mine by mixing some olive oil and balsamic vinegar. I also add thyme, salt, pepper and just a little bit of mustard.


When the chicken is done grilling, cut it up while its still hot.


When you are ready to eat, poor the dressing over the salad greens. Then place hot grilled chicken pieces over it.

I use OXO salad spinner to dry my salad after washing. You don't want your salad to be too wet, it will dilute the dressing and the flavors. Also, a nice wooden bowl is good for serving salads and both formal and casual dinners.
