Summer Moussaka


Hello! Here is another messy looking meal for you. How about that? This recipe is vegetarian and the best thing about it is- you can add any veggies you like.


Ingredients:
  • 1 onion
  • 1 eggplant
  • 3 zucchinis (yellow and/or green)
  • 1 potato
  • 1 cauliflower
  • 4 tomatoes
  • 1 carrot
  • 1 bell pepper
  • 1 garlic, minced
  • basil
  • 1 cup sour cream
  • 2 eggs
  • 1/2 cup rice
  • salt and pepper to taste

Slice the veggies and break up the cauliflower.


Sauté the onions in oil for a couple of minutes.


Grease the baking dish. Arrange eggplant slices on the bottom of your baking dish as the first layer. Lay the potato slices over eggplant.


Then squash slices.


Arrange cauliflower evenly over squash.


Cover with green zucchinis.


Then add the rest of the veggies over the top.


Mix eggs and sour cream together and poor over the veggies. Bake at 450F for until the top layer becomes crispy and all the layers of veggies are cooked all throughout.


Serve hot with fresh bread.

  1. looks fabulous, but where do you use the 1/2 cup of rice?? Coincidentally, last night I made something similar because I wanted to finish off the vegetables in my fridge: potatoes, brocolli and carrots. I added some spaghetti sauce and it was supposed to become a poor man's lasagna. Anyway will have to try it with the egg and sour cream combo as well.
