Grilled Potato and Onion Side Dish


When you are turning on your grill to cook a chunk of meet, why not also grill your side dish.

INGREDIENTS:
1 potato
1/2 onion
1 Tbsp butter
Seasoning: salt, pepper, basil, thyme, oregano, dill.
Aluminum foil
(1 potato measure is good for one person. Multiply these measures for however many people are you cooking for)

Cut the potato and the half onion into 1/8 inch slices.

Place on the Aluminum foil and arrange the onions slices in between the potato slices.


Season.

Place butter on top.


Wrap the Aluminum foil tight. Fold the ends so that the butter and seasoning don't leak out.


Cook on the grill for about 30 minutes.

  1. What kind of fire did you use? Medium? Would you set this dish in the back or off the flame a little bit?

  2. Med or a little higher is best. You want to brown the bottom of the potatoes and onions but not burn them. I would not set them off the fire as they would not brown. The brown bits are really tasty.
